I sometimes find recipes by Googling ingredients and seeing what comes up. I found this one when I was looking for a way to use up a fresh pineapple. It works with fresh, slices and crushed pineapple and is very easy and seems to be foolproof! Serves 4.
Ingredients
1 x 20 oz (454 g) tin crushed pineapple, drained (fresh - chop and mash it a bit)
1 cup (225 g) white sugar
2 tablespoons (28 g) cornflour
¼ cup (60 ml) cold water
2 eggs
1 tablespoon vanilla extract (I found this was too much - about a teaspoon is fine)
1 tablespoon (15 g) butter
1 teaspoon ground cinnamon
Method
1 Preheat oven to 350F/175C/Gas Mark4. Grease a 9x9 inch baking dish
2 In a mixing bowl, mix together the pineapple, sugar, cornflour, water, eggs and vanilla. Pour the mixture into the prepared baking dish. Dot the mixture with butter and sprinkle with cinnamon.
3 Bake in a preheated oven for one hour.
Note: it's an American recipe so the quantities in grams are my conversions but they seem to work ok!
