    Baked Pineapple

    I sometimes find recipes by Googling ingredients and seeing what comes up. I found this one when I was looking for a way to use up a fresh pineapple. It works with fresh, slices and crushed pineapple and is very easy and seems to be foolproof! Serves 4.


    Ingredients

    1 x 20 oz (454 g) tin crushed pineapple, drained (fresh - chop and mash it a bit)
    1 cup (225 g) white sugar
    2 tablespoons (28 g) cornflour
    ¼ cup (60 ml) cold water
    2 eggs
    1 tablespoon vanilla extract (I found this was too much - about a teaspoon is fine)
    1 tablespoon (15 g) butter
    1 teaspoon ground cinnamon

    Method

    1 Preheat oven to 350F/175C/Gas Mark4. Grease a 9x9 inch baking dish
    2 In a mixing bowl, mix together the pineapple, sugar, cornflour, water, eggs and vanilla. Pour the mixture into the prepared baking dish. Dot the mixture with butter and sprinkle with cinnamon.
    3 Bake in a preheated oven for one hour.

    Note: it's an American recipe so the quantities in grams are my conversions but they seem to work ok!

      One of the few things I don't eat - pineapple! I quite often google recipes and neglect my shelf of cookery books .

              does sound yummy Daisy, and sweet... i am not too sure if i like Pineapple or not, i would eat it, but then again i would eat anything....

                I too tend to ignore my many,many cook books and am inclined to ask Mr Google. Unfortunately I then print off the recipe and add it to a folder thus creating yet another cook book!

                I very rarely buy fresh pineapple but do use the tinned variety and your recipe does sound delicious.

                  Sounds nice Daisy, I love pineapple, not fresh though. Don't care much for fresh fruit.

                      No it's not wrong Qwerty . Many years ago I used to make a cake called sand cake, and that had cornflour in.Lost the recipe though.Will have to see if it's on the net.

                        Qwerty - I generally use cornflour for thickening gravies and sauces. My mum always used plain flour for this but it can go lumpy and cornflour doesn't. And with 3 gluten-free members of the family it's fine for them, too. It seems to crop up a lot more in American recipes, as cornstarch.

                        Clover - I do the same, and now have a bookcase full of unused cookery books, plus a plastic folder with a mish-mash of recipes I've done once or twice - or intend to do sometime!

                        Nanto - sand cake sounds intriguing!!

                        I often buy fresh pineapple as it's OH's favourite fruit. Preferably with Bird's custard!
