I've been making mincemeat (Delia's) for the past few years and it spoils you for the shop versions! First time I made pickle I nearly threw it all away as I didn't know it shouldn't be eaten straight away. Luckily someone on another forum put me straight!
I've been using ready made puff pastry but only the top few layers are crisp! Any ideas on where I am going wrong?xx

I've made Delia's puds & mincemeat in the past. I seem to remember they last a few years.Luckily I made the Christmas cakes & puds early October. They're in airtight containers on top of the cupboards in the utility. When I'm feeling a bit better I'll make a ''alcohol free' Christmas cake for DD2 as she's due to have her baby in February. I'll also use some of the remaining ingredients to make the mincemeat.
