I haven't made one during lockdown yet, but I'm looking for an opportunity. Mainly because I've always wanted a traditional trifle bowl and I now have one.
My dad always made us a trifle for Boxing Day and birthdays, and when I do make one I use his method -
Sherry-soaked trifle sponges to line the bottom, followed by tinned fruit (usually peaches), red jelly all mashed up so it sparkles, a good thick layer of Bird's Custard (made from custard powder) topped with whipped double cream and decorated with fruit, sprinkles etc.
I'm sure there are lots of variations, though????
