I have so much beetroot in the garden! I don’t like it pickled. Does anyone have any ideas how I can preserve it please? Neighbours are hiding from me now, what with the tomatoes too!

We force tomatoes and cucumbers on to everyone. There is a big bowl full here at DDs to greet her when she gets in!
SIL does something amazing with golden beets, not sure what though!

Aha! Lizzie, I did wonder how they froze. We like them hot with mayo and onions (I have plenty of onions, but they keep.)
Gem, Not sure I could eat borsch. 😬
We had a tomato growing competition with GCs, so they have more than enough too. I freeze them and then, when defrosting, drain them and cook in the oven as a side veg. Red Velvet Cake uses beetroot. Though often people cheat and just use red colouring!

Grauntie - well done on your bumper beetroot crop! I used to grow white beetroots which I preferred to red.
But that doesn't solve your excess-beetroot problem and the only thing I can think of is beetroot houmous.
I wonder if there's anything here that will help:
