    Ideas Please!

    I have so much beetroot in the garden! I don’t like it pickled. Does anyone have any ideas how I can preserve it please? Neighbours are hiding from me now, what with the tomatoes too!

    I have a neighbour with an allotment and she par boils it then puts it in the freezer.

      We force tomatoes and cucumbers on to everyone. There is a big bowl full here at DDs to greet her when she gets in!

      SIL does something amazing with golden beets, not sure what though!
      Borsch Is beetroot soup isn't it? Maybe you could try that Grauntie

        Aha! Lizzie, I did wonder how they froze. We like them hot with mayo and onions (I have plenty of onions, but they keep.)
        Gem, Not sure I could eat borsch. 😬
        We had a tomato growing competition with GCs, so they have more than enough too. I freeze them and then, when defrosting, drain them and cook in the oven as a side veg. Better flavour than passata I my opinion.

              We only have pickled beetroot. Hubby likes it on a salad.
              We also like it with mashed potaoes. But,we only buy the jars of pickled beetroot.
              Sometimes I forget to like posts,but that doesn't mean I don't like them.

                Have you tried putting them in a cake GM? Not tried it myself, but have seen recipes using them.

                  Red Velvet Cake uses beetroot. Though often people cheat and just use red colouring!

                      Recipe now printed (thanks Gem) Will make it for the weekend when DD2 and co come. I wonder whether the colour has any ‘effects’. 😆😆😆

                          Suggestions from SIL

                          It could be grated and fermented ( he's big on fermenting stuff,) with some garlic and fennel seeds, or try making beetroot ketchup.

                              Grauntie - well done on your bumper beetroot crop! I used to grow white beetroots which I preferred to red.

                              But that doesn't solve your excess-beetroot problem and the only thing I can think of is beetroot houmous.

                              I wonder if there's anything here that will help:
