    Lemon Curd.

    DD2 has a birthday next weekend. She has asked for a fat free sponge with lemon curd. I am expert at fat free sponges thanks to the recipe book I inherited with my 1960s Kenwood, but need to make lemon curd with ‘Pure’ or similar butter substitute. DD has a violent dairy intolerance.
    Has anyone tried this please? If not, I will make it and report back. I intend to make it in the slow cooker.
    Also, has anyone made jam in their bread maker?

    Grauntie, I've never tried making lemon curd, but there are some dairy-free versions on the market if you end up with ready-made. It's one of those things I always check the label for because manufacturers seem to change their recipes frequently, but my dairy- and gluten-free GS1 loves it. Perhaps I should try making some - I'd just substitute Pure and hope for the best.

    I've not tried jam in the bread maker.

        I have made lemon curd a long time ago, I think it contained eggs. I have never made jam in the bread maker. I made 3 soups today, carrot, tomato and lentil. Butternut squash and celery, most of them are in the freezer, just a couple in the fridge. I love my soup maker.

          My breadmaker can make jam, but I have never tried it either. One of us will have to do so won't we?!

            Plant, I have a soup maker but rarely use it I don’t know why. I should get it out and make some.
            Gem, my bread maker book gives a recipe for frozen berry jam. I have these in the freezer so I will have a go and report back.

              I have a bread maker but didn't know you could make jam in it. I just have visions of all the insides splattered with sticky stuff & a pan you can't get clean. I'll keep an eye on this thread.🤞

                Lemon curd .l made it yesterday evening. It didn’t taste good warm, very sweet and acidic, but cold from the fridge on toast this morning it was delicious.

                          Gem, toast going in now, tea in the pot. Hurry up!
                          Yes Plant, kept in the fridge. I’ve got three weeks to eat it. 😋 I did use Pure Daisy, there was a little oily substance on the top so I soaked it up with a piece of kitchen roll. Seems none the worse for that though. 😬
                          Frozen fruit jam now made (bread maker, there is a jam programme 😳) Still warm but it tastes wonderful! I used sugar with stevia, bought it premixed. 1\2 quantity so OH can have some. Not sure how good the set is.
                          Can’t help feeling maybe life is too short to make jam, so many things to do, but I had to know whether these methods work. 😁

                              You have inspired me to use the jam programme on my bread maker Grauntie! I noticed it had one when I first got it, but have never tried it.
