    Gluten- and Dairy-free Pancakes

    A bit late for this year's pancake day, but I thought I'd add this recipe for future use. I know I'm not the only one on the GF trail!

    170 ml (6 fl oz) Soya Milk
    55ml (2 fl oz) Water

    2 Eggs, plus one egg white

    4 dessertspoons Gluten-free Self-Raising Flour

    ½ teaspoon Baking Powder/Raising Agent


    Sieve flour into a bowl, making a well in the centre. Put in the eggs and beat to get rid of lumps. Add the baking powder and liquid, beat again, and that's it.

    I used about ½ a cup of mixture per pancake and it made 6 and a little one!


    There are lots of recipes using plain GF Flour, but I had only got SR in, and I remembered DIL giving me this recipe years ago. I made the batter in the morning, to use in the afternoon, but I don't think it's essential to let it stand. I used large eggs, and good, rounded spoonfuls of flour.

    There were none left!

    Well, I very nearly pmd you for the recipe Daisy! All GC are here tomorrow and I thought I would make pancakes. Thank you. . I have just made rock buns but with a dollop of jam instead of fruit. I’m hoping the GF batch will be ok. I have the GF,dairy free, now vegetarian one to feed as well as a dairy and yeast free DD so I’m trying to get ahead of the game.
    Have you made GF Yorkshire puds? They are all here on Sunday + a husband or two and I thought we’d have flat cap yorkies with casserole in. It would be nice for GD to have a GF,quorn filled one too.😬
    P.S. do you think plain GF flour will be ok for pancakes?

      GM - answering your last question first - I found a recipe on BBC.co.uk/food/recipes/basic pancakes with sugar and lemon. Sorry I can't give you the link, but my connection is really dodgy and I can't get a second browser up. Most of the GF pancake recipes I looked at were for plain flour anyway, but this looked most like 'normal' pancake batter.

      110g/40 Plain GF flour, sifted
      pinch of Salt
      2 Eggs
      200ml/7floz Milk mixed with 75mil/3fl oz water
      50g/2oz Butter

      Method as above, but add 2 tbs of the butter (melted) into the batter, and whisk. Use the remainder of the butter in the frying pan.

      If you're doing GF and DF I'm sure you could leave out the butter and use oil in the pan and use soya milk like I did.

      That makes 12-14 small pancakes - it says!

      My DIL makes GF Yorkshire puds all the time - and they freeze (cooked) really well as well. They're more substantial and 'spongey' than ordinary ones, but taste really nice. I think the recipe is similar to above in Post 1, but if I can speak to her tonight I'll check.

      I'm sure the rock buns will be lovely.

      I'm be the quorn-filled one will be really tasty, and GD will be delighted.

      You've certainly got your work cut out catering for so many different needs!

        I will ask DD for her vegan pancake recipe. They have them for breakfast regularly.

          Just had a message to say second son of DD2 now has the sick bug so all change again. Hopefully Sunday will be ok. I am going to try the Yorkshires tomorrow and then I can freeze them. Thank you once again.
          I made a very successful fat free GF sponge, I used plain GF flour, baking powder and xanthan gum. The difference was not noticeable at all!

            GM - sorry to hear about your poorly DD2, but I hope she's ok for Sunday and all this delicious food.

            The GF Yorkshires freeze very well and can be cooked from frozen. I haven't been able to speak to DIL1 about her recipe, but it sounds as though you've got it sorted.

            I use Pure Soya spread in GF sponges and that works very well - but using an ordinary sponge recipe, like the weight of eggs for the other main ingredients, it needs extra liquid to stop it being too dry. I haven't tried xantham gum in cakes though. I've got it for pastry, but I haven't been very successful with that and have ended up buying ready made pastry.
