    White Cake.

    This is the recipe I used but I did halve the quantities.

    1 cup milk,room temperature
    6 egg whites
    ! tsp almond extract [I didn't have any!]
    1tsp vanilla extract
    2 and 1/4 cups cake flour [ I used SR ]
    1 and 3/4 cups sugar
    4 tsp baking powder
    1 tsp salt [ I omitted this!]
    3/4 cup [6oz] softened butter

    Preheat oven to 350
    Grease,line and flour two 9 inch cake pans
    Combine milk,egg whites and extracts in a small bowl and mix with a fork.Set aside.
    Combine flour, sugar, baking powder and salt.Add butter and mix in electric mixer or rub in by hand until it looks like wet sand.[ ?]
    Add milk mixture and beat well but don't over mix.
    Divide between tins and gently shake pans to smooth batter.
    Bake 30-35 minutes until toothpick inserted in centre comes out clean.
    Let cakes cool for 15 minutes before turning out onto a rack to cool completely

    I made my half quantity cake in a deep 8 inch cake tin and then cut in half before sandwiching together again with buttercream.
    Instructions are given for a frosting but it was rather strange and complicated [being an American recipe as I expect you've noticed ] so i used my own recipe.

              We are enjoying the cake. I didn't think it would taste that different from a standard cake made with whole eggs but unless it's my imagination it does have a different flavour.

                Clover - thanks for the recipe. It sounds lovely and I expected you'd have to whisk the whites rather like a meringue, so it's easier than I was expecting.

                By the way - what did you use the 3 egg yolks for? I hate throwing half an egg away, but can never get my head round what to do with the unused part.

                  Daisy I needed the egg yolks originally to make a Carbonara recipe so was looking for a way to use up the whites when I found the cake recipe. I wanted something different from the old meringues
                  I can't bear to throw leftovers away and have to hold my tongue when SIL does.
