    Tomato soup and meat balls

    Large table spoon of butter
heap table spoon of plain flour
    1 tube of tomato puree
    1/2 Tea spoon of sugar
    salt &pepper
    Maggie liquid stock
    hot water
2 medium potatoes cooked and cut in spoon size chunks
    Mince
    1 small onion finely diced
1 slice of white bread without crusts

put butter in large pan and melt add flour and make a paste when it's smooth add a full tube of tomato puree and a little boiled water whisk till smooth add salt and pepper ,sugar and a good glug of Maggie about a table spoon add more boiling water till its at the consistency similar to Campbells soup thick but not gloopy .taste to see if you have enough seasoning.
Make meat balls by mixing mince salt & pepper finely diced onion (as much or as little as you like )wet the bread squeeze water out and mix in with the mince , roll into balls
add meatballs to tomato soup and bring to boil then turn down to low and simmer for 20 minutes stir occasionally so doesn't stick to bottom of pan then after 15 minutes add the potatoes to re heat
it keeps well and freezes well add a little more water if it's too thick after simmering to your own liking

Oma - many thanks! That sounds yummy - real comfort food without spending hours in the kitchen preparing it. I do sometimes make tomato soup but this is much better than spending hours peeling the skin off the little blighters!

Thanks Oma! I think I may try this, with minced lamb as I can't eat beef.
