    Bara Brith

    8 to 9 ozs dried fruit mixture
    1/2 pint boiling water
    3 strong tea bags
    6 ozs soft brown sugar( I usually use slightly less as it is a bit too sweet for our taste)
    8 ozs SR flour
    1 large egg
    1/2 tsp mixed spice
    1/2 tsp cinnamon


    1.Brew the teabags in the water for 5 minutes.Remove bags and stir in sugar.
    2.Pour tea over fruit,cover and leave to stand overnight.
    3.Mix all dry ingredients.
    4.Slowly stir in egg,soaked fruit and remaining tea.
    5.When the mixture has become like thick batter pour into a lightly greased, bottom-lined 2lb loaf tin.
    6.Place into a pre-heated oven gas mark 3, 325F, 160C for one and 1/2 to one and 3/4 hours.
    7. Leave to stand for ten minutes in tin before turning out onto cooling rack.

    This is really simple and very "moorish" especially spread with your favourite butter!!

    I use virtually the same recipe. It's pretty much bomb-proof, and even I have never had a failure.

    I've also been known to use tea left over in the teapot. I usually split mine into two 1 lb loaf tins and cook for just one hour. They keep well, and in fact, I think they're even better after a day or two. They're also fat-free until you slap loads of butter on.

    I'm not Welsh either (although OH is) but this is a good export.

        Yes I have this recipe but we call it Welsh Tea Bread and it is really delicious. I had forgotten about it as I made it a lot when the kids were young. Yes Daisy definitely benefits from lashings of butter - Welsh Butter of course. I am of Welsh decent too used to take the kids on holiday there. I would love to go back sometime. This recipe brings back lots of good memories.

          I made one yesterday I think I said so on chat 😊 had a piece with a cup of tea when I came in from shops about 10 am with lots of lurpak mmmmm yummy

              I made one yesterday as well. As it has no fat in the ingredients I don't feel so guilty when,like Oma I layer on the Lurpac!

                We've got one on the go at the moment, too. Hehehe - I've got this mental picture of all us grannies piling on the Lurpak and tucking in to our Bara Brith.
