    Libra Grans Dorset Apple Cake

    Yummy Dorset Apple Cake


    225g cooking apples,peeled, cored,diced.
    juice 1/2 lemon.
    225g plain flour.
    1 1/2 tsps baking powder.
    115g diced butter
    165g soft light brown sugar ( I use demerera)
    1 egg beaten.
    2-3 tbsps milk.
    1/2 tsp ground cinnamon.

    Preheat oven gas 4 or 180c,grease and line a 7 inch cake tin.
    toss the prepared apple in the lemon juice and set aside. Sift flour & baking powder,then rub in butter until mixture is like breadcrumbs. Stir only 115g of the sugar, the apple and the beaten egg.
    Mix well, adding the milk a little at a time until you have a soft doughy mix. Transfer to tin, mix remaining sugar and the cinnamon together and sprinkle over thee cake mix. ( I have tried experimenting by adding mixed spice,and another time a few mixed chopped nuts).
    Bake for 45-50 minutes,leave to cool for 15 minutes then transfer to a cooling rack. This is soooooo nice warmed with custard . ENJOY.

      It's lovely Pearl, both cold as a cake or warm as a pudding.
      I have made it many times. We are having it tonight with custard, after our roast chicken

        I am going to give it a try through the week, I was making a home made corned beef pie, but ended up with quiche, not much of a sunday dinner, then OH asked if there was any pudding, (this time of year isn't it) there wasn't so ended up with a cornetto, so think I will treat him through the week,

            Another scrummy sounding pudding for my list.
