    Lemon Drizzle Cake

    225g unsalted butter, softened, 225g caster sugar, 4 eggs, finely grated zest 1 lemon for the topping juice 1.5 lemons 85g caster sugar. Heat oven to 180C/fan160C/gas4. beat together butter, caster sugar until pale and creamy, add eggs s
    lowly and mix through. sift in flour and add zest, mix well. line a loaf tin (1lb) with greaseproof paper and spoon in the mixture, bake for 45-50 mins until skewer comes out clean. While cake is cooling in tin mix together juice of lemons and caster sugar for the drizzle. Prick the warm cake with skewer and pour the drizzle over the cake. Leave in tin until completely cool, then remove and serve.

            Name dropping now - When I was lucky enough to look around Mary Berry's garden with my Guiding friends, we had lemon drizzle cake but it was cut in half and the two layers were sandwiched together with lemon curd, very yummy

                Lemon Drizzle is my favourite cake of all time I must try that recipe that Avos has left for us together with the extra of lemon curd sandwiching together two pieces,how yummy does that sound thanks Plant.xx
