This is my favourite way of cooking (non smoked) salmon. I never eat salmon in restaurants now, as it never tastes as good as this
For each person:
I salmon steak/fillet
Tablespoon of cream cheese (I use Philadelphia light)
Black pepper
Chopped chives (optional)
Lay the salmon on a sheet of foil, enough to wrap around to make a parcel. Spread the cream cheese on the salmon, sprinkle the chives and pepper over.
Wrap the foil around to make a parcel. Cook at 180, gas mark 5, for 25 minutes.
I like this with either new or baked potatoes, and vegetables. It would be just as good with pasta or salad.
