More like palaver! I have never made a successful Pavlova yet! I thought I had cracked it with Mary Berry’s recipe but no, it’s too crispy and it seems to have big air holes in it! Uncuttable. I will now be serving ‘Southend-on-Sea Mess’, so it wont be wasted. If anyone can point me to a foolproof method please, please do.

Grauntie, many moons ago, when I was young and (more) foolish, I had several goes at making pavlova. I learned a variety of ways to fail with them - cracking up was the most successful. I'd stick with Southend-on-Sea Mess - it's original and I'm sure entirely delicious.

Oooh! I thought you would all be experts! 😂 A friend who came to our NY bash has threatened to teach me, I have a feeling she will be disappointed. I will report back.
The S-o-S Mess was eaten so I’m guessing it was OK . (Can’t eat it myself because of the cream)Women are like tea bags; you never know how strong they are until they are put in hot water.

Cream is a problem with a lot of desserts, isn't it. I'm ok with creme fraiche and I also use Elmlea sometimes, but neither give quite the same results.
