I'm thinking about making a Simnel cake for Easter. We've got a big family get together organised for Easter Monday, and I thought it would be a festive touch. But I want to make it in advance, (this week) so what I'm wondering is would it keep rather like a Christmas cake keeps?

Plant, I've got recipes with marzipan middles and without. I love marzipan and finding it in the middle as well as on top is an extra treat, but OH and DS1 dislike it!
Gem, if you like Christmas cake you will probably like Simnel cake as well.
