Christmas Pasta Bake:*
(the sort of recipe you could adapt for other leftover occasions)
Ingredients - Pasta, Cooked Meat (any kind) shredded, Vegetables, eg Roasted carrots, parsnips, Brussel sprouts, red cabbage, broccoli, Creme Fraiche (for the sauce), mustard - wholegrain or Dijon - chopped herbs such as parsley or basil, Cheese, grated.
Method - Cook the pasta in a large pan of boiling water leaving slightly undercooked. Drain and add back to the saucepan. Add all the other ingredients apart from the cheese and mix well.
Tip it into a large baking or gratin dish and sprinkle the cheese on top.
Bake in a preheated oven at 200C/400F/Gas 6 for 20 minutes.
Variations: instead of creme fraiche use soft cheese and add a little milk to loosen it up, or do a tomato based sauce using a tin of chopped tomatoes, and add a little seasoning.
Cheese - the base of grated cheese is good for melting but you could also add some crumbled goat's cheese as well.
No quantities given - just adjust to what you want to use up and how many you are feeding.
I made this tonight with smoked gammon chopped into small cubes and a tin of tomatoes, sprinkled with black pepper. It didn't feel too much like Christmas leftovers and was very filling!
