    Double baked potatoes

    This is just my name for them!
    It's a recipe which I really love, and easy and simple.

    Bake your potatoes, one large baking potato for each person.
    Once they are done, remove the potatoes from the oven, cut in half and scoop out the potato from each one, leaving just the skins.
    In a large bowl mash the potato, adding butter, salt and pepper (if you like) Add plenty of grated cheese, mix it all together. Fill the half potato skins with this mixture and return to the hot oven for a few more minutes.

    Other options are to sprinkle some extra grated cheese on top of each filled potato before returning them to the oven.
    Adding chopped spring onions or cubes of bacon to the mixture add extra flavour too.

    These can be served alone, with baked beans, or maybe with sausages as well if you want a bigger meal.

    I sometimes do that but with egg as i am not a great cheese fan but B loves cheese and onion in his ,

    I like spiced mixed beans with mine sometimes .

    I cook mine in the Microwave depending on the size 12-15 minutes scoop out and mix replace then crisp the skins in the oven
    I eat the skins but B wont , to my mind that's the best part
    He wont eat them but loves potato skins if we eat out , I keep telling him its the same thing just cut in wedges
    Im not fat just 6ft too small

          I cook my potatoes in the microwave then put them in a hot oven to crisp up.
          We eat the skins,thats the best part.
          I don't scoop the filling out though and mix it with anything.
          Sometimes I forget to like posts,but that doesn't mean I don't like them.

            Gem - I do something very similar but I just pop the refilled skins, topped with grated cheese under the grill to brown.

            We call them Super Jackets! They're delicious, aren't they.

              I popped a Desiree potato on the scale last week and the price came up as 80p! So I changed it for a white pot which was 50p ?When did potatoes get so expensive! I don’t eat pots very often and have been spoilt, OH used to grow all our potatoes.
