    Recipe Ideas for Lockdown

    While we're mostly stuck in the house, in theory we should all have plenty of time to whisk up gourmet meals every day. I'm sure this isn't the case though, and possibly we're finding we have to adapt tried and tested meals because we haven't got certain ingredients in.

    A few days ago, Enfys was asking for idea for meat-free meals, and the only thing I cam up with was souffle omelettes. So what is everybody cooking and have you tried anything new recently?

    Yes, thank you for that Daisy.

    Yesterday I made a risotto using onion, courgettes and roasted butternut squash, it was delicious. Luckily we like rice and pasta meals so I shall be experimenting a bit more.

        I hate cooking, so not trying to think of any new recipes.
        Just having the usual kind of meals here.
        Sometimes I forget to like posts,but that doesn't mean I don't like them.

          Now this is going to sound a very strange meal but believe me it was delicious

          The other night B made Toad in the hole , about 10 minutes before it came out he broke eggs into it and let them bake then we had it with Beans honestly you wouldn't think Yorkshire pudding would go with Beans but it was amazing

          We have also had Home made Sausage rolls something we haven't made for years .
          Im not fat just 6ft too small

            Oma - Actually, that does sound tasty. I made mini sausage rolls at Christmas because we ran out of ready-made ones. They are nicer than shop-bought, aren't the!

            Enfys - that risotto is a great idea. Jamie Oliver did something similar on a programme earlier this week. He seemed to make it up as he went along, but very similar ingredients and he added grated cheese at the end.

            I often do a vegetable stir fry - whatever needs using up in the fridge - and either do noodles or rice or pasta separately or just add quick cook noodles two minutes before the end. I usually add a splash of soy sauce for flavour, or Worcester sauce.

                Daisy I always add grated Parmesan to risotto, nice and tangy.

                  Nanto, did I just read that you hate cooking, well if true, you certainly cook some lovely meals.

                  My OH used to love Chicken risotto, yes grated cheese on it is good.

                    Jamie Oliver said he'd normally use parmesan, but he hadn't got any - you're in good company, but your fridge is better stocked!

                      Hi everyone. I recently tried grilled pumpkin with my family on Halloween. Did you try it? It is so tasty. Sharing the recipe we use:
                      1. Preheat grill to medium-high.
                      2. Clean the pumpkin.
                      3. Cut the pumpkins into 3/4 inch slides, remove the "guts."
                      4. Brush the pumpkin with olive oil and sprinkle with rosemary and sea salt.
                      5. Place the slices on the grill.
                      6. Grill for 5 minutes.
                      7. Flip, and grill for another 5 minutes.
                      8. Grill until you can easily pierce the slices with a fork.
                      9. Remove from the grill and serve. The other recipe that I tried and the source with tools for cooking.

                        Sandra - I've been wondering what to do with pumpkins. I had no idea you can cut them up and grill them.
