    German Potato Bread

    Recipe for Potato Bread

    300grm peeled weight of Maris Piper potatoes
    300grm Strong white Bread flour
    1 Tea Spoon Sugar
    1 Tea spoon Salt
    1 pk Yeast
    5 Table spoon potato cooking water
    Onion seeds ( optional)

    Boil Potatoes till soft , reserve some cooking water , drain rest
    leave potatoes in pan on a low heat for a minute to dry them out

    put 5 TBL spoons of cooking water in a bowl ( luke warm not hot )
    add Yeast and Sugar stir and leave in a warm place for 10 mins

    Mash potatoes with 1 tbl spoon of oil while they are warm ( room temp) add to yeast mix stir in salt

    Start to add flour a couple of tbl spoons at a time
    Keep stirring till you cant stir anymore and its firmed up

    Turn out and knead for 10 minutes

    Put in a oiled bowl covered with oiled cling film or damp t-towel
    leave to rise for 1 hour

    Knock back shape into a ball put on a greased baking tray and leave to rise another 30 minutes

    Put 2/3 slashes on top of Bread and sprinkle with a little wholemeal flour if you have any or just any flour at hand

    Put in over on 200 for 40-45 mins ( electric ) sorry don't know what that would be in gas will have to look that up
    Im not fat just 6ft too small

          Oma - many thanks - and to Brian for sharing his recipe. It looks straightforward to make - I'll have to have a go because it sounds so delicious. I've got everything in stock - except the potatoes!! They're on the shopping list now.
