    "Healthy" Cake Recipes

    OH and I are both trying to lose weight, but it's hard to give up cake complete, especially in the winter. OH went supermarket shopping today and I asked him not to buy any cake at all, and I would make something less unhealthy.

    But apart from Bara Brith, which I make quite often, and Banana Bread which needs ripe bananas, I can't think of anything. Has anybody got any inspiration for, say low fat or low sugar cakes? We like most things except coconut.

    Will lookout the recipe for beetroot cake and have a good one for moist carrot cake.

            Daisy, to cut down the sugar in cakes,you could substitute it with Canderel.
            Sometimes I forget to like posts,but that doesn't mean I don't like them.

              Shem - many thanks for those recipes. They all sound really tasty and quite unusual. It's nice to have something different., and they all sound easy enough for a very erratic cake maker like me. I'll cook the beetroots today and have a go at that one tomorrow.

              Nanto - I've never used Canderel. Is that the one that looks like sugar?

                I have used Canderel when wanting to make make a pudding for Diabetic guests Daisy. It looks like sugar and comes in a jar. You use different quantities than you would sugar. It gives you the info on the label. Splenda is another brand.

                  I use Canderel quite a lot in cakes. I usually use less sugar than the recipe says and then for half of that I use Canderel.It involves a bit of maths but nothing too taxing.

                    I haven't tried it, but I think I will.



                    Absolutely delicious served warm from the oven with a tablespoon of Greek yogurt.

                    Easy Cook Plum Cake - 179 calories

                    Preparation Time: 15 mins

                    Cooking Time: 45 mins

                    Serves: 12 (small slices) - increase calories to 268 if you divide into 8 servings

                    Calories per serving: 178.8

                    Ingredients

                    Sugar, Caster - 150g

                    Butter, Salted - 115g

                    Flour, Wholemeal - 140g

                    Baking Powder - 1 Tsp/2g

                    Eggs, Medium - 2 Eggs/116g

                    Salt - 1 Pinch/0.1g

                    Plums, small and halved - 200g

                    Cinnamon, Ground - 1 Tsp/3g

                    Sugar, Caster (for topping) - 1 Tbsp/12g



                    Milk, semi-skimmed - 2 tblsps



                    Method

                    Preheat oven to 180 C / Gas 4.

                    Beat sugar and butter until fluffy with electric mixer. Mix flour and baking powder and sift into creamed mixture. Beat in eggs, milk and salt. Mix everything well.

                    Pour batter into a greased 26cm round springform tin and smooth out. Top with the plums (cut side up) and sprinkle with 1-2 tablespoons sugar and cinnamon.

                    Bake in preheated oven on lowest shelf for 40-50 minutes or until a skewer comes out clean. Cool to room temperature or serve warm.

                      Gem and Clover - many thanks for the information on Canderel and Slenda.

                      Gem, the plum cake sounds very nice. I love moist cakes with fruit in them, and cinnamon gives a great flavour.

                      I'm going to be spoilt for choice!

                        OH chose the Carrot Cake -


                        It's the first time I've used my new food mixer and the first time I've ever baked a cake using oil. I didn't know how long to cook it for but after 45 mins it wasn't done so I left it another 15 mins. I probably should have covered it over with greaseproof paper for the last 15 mins or so as the top got a bit burnt.

                        But it tastes lovely - nice and moist. It won't last long.

                            Main problem with home made cakes is the way they sit there whispering “Eat me! Eat me!”
