    Bara Brith for Nana

    8-9 ozs Dried fruit mix
    1/2 pint boiling water
    3 strong Tea bags
6ozs Soft brown sugar ( I use dark brown but light brown is good too just makes a lighter coloured loaf )
    8ozs SR flour
    1 lg egg
    1/2 tea spoon Mixed spice
    1/2 tea spoon Cinnamon

    1) Brew the tea bags in the hot water for 5 minutes , remove the tea bags and stir in sugar
    2) Pour tea over fruit , cover and leave to stand overnight ,
    3) Mix all dry ingredients
    4) Slowly stir in Egg Soaked fruit and remaining Tea liquid
    5) When mixture has become a thick batter pour into a lightly greased bottom-lined 2lb loaf tin
    6) place in a pre-heated oven Gas marked 3 , 325F , Electric 160C for 1 1/2 to 1 3/4 hours, check after one and a half hours sometimes only takes that
    7) Leave to stand for 10 mins in the tin before turning out

Lovely on its own or as I like it with butter spread on it

Oma, I use a very similar recipe and it is delicious! I often make it in 2 x 1lb loaf tins. I wrap the spare one in cling film and it keeps for several days.

It’s also relatively low fat so a healthy choice - depending on how much butter we slather on it. πŸ˜‰πŸ˜

Thanks Oma (& Clover) it does look easy & tasty. Next time I go shopping I'll get the ingredients & try my hand at making it. Thanks again.πŸ‘
