I mentioned this in the thread about food likes and dislikes. It's really easy!
Lightly oil an oven-proof dish and layer with thinly sliced onions, saving enough for another layer. Half a large red onion will do for two chops.
Layer thinly sliced new potatoes over the onions and season to taste.
Place the pork chops on top (with or without bone, but bone will take a bit longer to cook).
Layer more onions and potatoes, and season again.
Core and slice one or two eating apples and layer on top of the potatoes. Squeeze the juice of half a small lemon over the apples. Add a good layer of grated cheese of your choice.
Bake in a pre-heated oven at 180C, or 160C Fan, or Gas 3 for 45 mins to an hour, making sure the pork is cooked through and piping hot.
Serve with any veggies you fancy.
