We have a sweet tin in the house purely for the grandkids and we fill it up with more sweets when it gets a bit low. We tend to buy things like Heroes as they like most of those although they always seem to leave the tiny cream eggs until last and sometimes we fill up again before these are eaten. So what to do with a dozen mini cream eggs. Since I love baking and like to invent my own cakes sometimes I though why not bake them in a cupcake. So today I made my usual chocolate cupcake mix and put a tiny cream egg into the middle. I actually found something on the web about this with the tip that they should go in the freezer overnight otherwise they will just melt in the oven. The other good tip was to make absolutely sure the egg is completely covered with the mixture. So I made a dozen cream egg cupcakes and iced them and topped with honeycomb pieces. Way too sweet for my taste so I froze the whole lot. Now I cannot wait for Thursday when the grandkids are coming and I can give them a cupcake with a surprise in the centre.

None of us has a very sweet tooth here. Now and again I crave chocolate and we do keep a supply for the smalls, but more often than not it is forgotten. We have been to the one in Caesars Palace in Las Vegas. Their cheesecakes are to die for.
