    Graved eggs. Never heard of them.

    I accidentally came across these on the internet this morning. To be honest I have never heard of them before.You mix equal quantities of salt and sugar.Put half of it in a dish, separate the eggs and put the yolks on top of salt/sugar mix.Cover with the rest of salt/sugar. Leave at room temperature for 75 minutes.Carefully remove yolks and brush off salt/sugar mix. Heard they are nice on buttered toast.
    Didn't put this in recipe section,because I just wanted to know if anyone had heard of them or tried them. Don't fancy them myself.Hubby certainly wouldn't eat them. He likes eggs,but likes them cooked.
    Sometimes I forget to like posts,but that doesn't mean I don't like them.

    It sounds interesting, Nan2! I suppose it's a sort of curing/preserving process. I'd give it a try if I had spare yolks after making something like meringues. 😀

      I don't think I will be trying them.It is a form of curing,but I like my eggs cooked.

        Yes cooked for me too, although I used to make Mayonnaise with raw eggs!

          I still make mayonnaise with eggs but I have looked at this recipe and I don't think I will bother. I like eggs but cannot be bothered with all that faffing about.

            No I wouldn't like them and I have not heard of it, I can only eat eggs I have cooked myself, or they have to be turned over, and wouldn't touch a raw egg....

                  Never heard of this either. Perhaps it is an old fashioned idea for feeding invalids? It used to be thought that the yolks were good for you. I seem to have gone of egg white recently so perhaps I should give it a try? Not sure what the health gurus would make of it.

                    Shem - I remember our GP some years ago saying that eggs were evil little balls of fat (or words to that effect), but now it seems they are good for you again - just like they were in the War when fresh eggs were so highly prized.

                      I read that the reason egg are okay now is that they have stopped feeding the chickens with bonemeal which either brought up the cholesterol level of the eggs making then unsafe for anyone with high LDL levels or had the risk of spreading BSE. Now the cholesterol level in eggs is lower hence we can all eat more. I love eggs but not graved though. Sounds horrid sorry.

                        BL - thank for that. I had no idea about why they are now considered 'good'! I hope the farming and food production industry is finally learning that you have to grow things naturally and fee livestock what it was designed to eat or risk the consequences! Slightly off topic, but it would also be good to see a return to eating foods in their proper season!
