    Gluten Free

I was wondering if anyone on here was gluten free? I have coeliac disease and cannot have gluten and that is barley, wheat and rye. I have adapted my baking with gluten free flour but I am always looking for recipes and ideas to make my baking better. If anyone has any tips or recipes they can share I would be very grateful!

I can't remember any of the ladies mentioning that they were gluten free. Hope someone can come up with some ideas Fairyqueen.

DD1 is newly gluten free FQ, and so are two of my good friends. (people that I invite to eat 😁). Have you been GF for long? I find there are ways around most things but then I’m not cooking gf every day! I’m sure Daisy is our expert.
I’m very sure you could teach me a thing or three. For instance, can you make decent gf bread in the bread maker? That was disaster 1. Pastry was disaster 2. I buy the bread now and avoid pastry.
Honestly, it’s chaos in this house. DD1 is gf, DD2 is dairy free, also she can’t have yeast or red onion, or sugar without dire consequences, and SiL 1 is a vegetarian, OH is a type 1 diabetic and I am dairy free. Add that to the GCs likes and dislikes, Sunday lunch is an amazing meal! 😆

Wow Grauntie,i don't envy you trying to make a meal for everyone.

Fairy,my sister in law is gluten free. She was diagnosed coeliac about 4 years ago.
I know she buys bread, but she does make gf cakes and pastry.
The hardest thing to make she found to make was yorkshire puddings, but she has mastered them now.
Sometimes I forget to like posts, but that doesn't mean I don't like them.

FairyQueen, I'm definitely not an expert - Grauntie is too kind! - but one GS is gluten- and dairy-free and DS2 and my two GDs are as well.

DIL2 makes superb GF bread in her bread machine, and the Rubik's cube cake she made for GD1's birthday was all GF and very tasty. I'll ask her for her bread recipe - it also keeps marginally better than other GF bread so win-win.

I make most cakes either ordinary or GF depending on who's eating them. I use Sainsbury's own brand GF Self-raising flour, and for dairy-free as well, Vitalite spread works well. I weigh the eggs in shells and use the same weight of flour, fat and sugar - standard Victoria sponge recipe - but add some liquid - usually smooth orange juice, until it's runnier than you would normally have a sponge mixture. For a chocolate cake I substitute about a quarter of the flour with pure cocoa powder, and also add extra liquid. I've made passable pastry by adding Xanthan gum, but it's not great.

For gravy I use Kallo GF granules or cubes.

My DS2 enjoys cooking and he's adapted most ordinary recipes to be GF, and you really can't tell the difference. I'll ask him what his favourites are. But you live and learn, don't you. I didn't realise that Soy sauce needed to be GF, and I've had my fair share of disasters.

Grauntie - I've got a friend who is allergic to garlic. This makes eating out a nightmare, and she always double checks before she orders. In one very upmarket restaurant she asked if the soup of the day was garlic-free. Without a shadow of embarrassment the waitress said she'd go and check on the packet!

FQ - here's a link to a thread about gluten-free and other special requirements, if it's any help to you.

Thank you so much for your replies everyone. Daisy, thank you for the cake tips. I have been gf for 4 years. My cake baking is pretty much ok but being gf is a work in progress. Using gluten free flour is not the same as normal flour and it certainly doesn’t perform as well. I don’t bake bread as I’m not a big bread eater and Husband wouldn’t eat gf free bread. The best gf bread I’ve found is M&S seeded brown loaf. Daisy, I will try Vitalite spread as I usually use Stork. I am a member of The Coeliac Society and they have good stuff on there too. Thank you for the links- I’ll have a look.
