    Summer meals

I struggle with the heat and what to have for tea, I bought s joint last week and we ended going to a bbq that day, so thought I d cook it today but Its too damned hot, I don’t know what to eat to be honest , I could live on sandwiches to be honest. I’m much better with the winter menus, we are not big salad eaters , and if this weather continues and it seems it will I don’t knw how we will survive I may be much slimmer in the days to come 🕴

As you know I love a salad Qwerty but there are only so many of those you can eat isn't there ,
I tend to eat a lot of Salmon and jersey royals or asparagus and green beans this time of year ,
Soup and like you Sandwiches , I'm happy with a fish finger sandwich or chicken it's too hot to eat isn't it ,
I've just made chicken sandwiches for lunch and a bowl of soft fruit each .
    Having Ham salad for tea
Dog just had a bowl of ice cream so he's happy and easy to feed

I enjoy a nice sandwich to be honest and over this past week-end I ditched cooking a roast far too warm I picked up a couple of steaks from Aldi and some long stemmed broccoli along with portabello mushrooms and it went down well.
We have been part-taking in wraps filled with chicken strips a handful of sweetcorn and red peppers drizzled with some sweet chilli sauce of course I have to have a bowl of Jersey Royals to eat either hot or cold I always have them in stock this time of year I can't live without them x

Hubby likes a salad, but i don't. if i make him a salad he likes something warm with it.
I will have a cheese omelette.
Today i made a few chips, scampi and garden peas. both of us enfoyed it.
Got a few jersey royals,so think i will do those tomorrow with cod in butter sauce and a few green beans.
I'm not a big fan of sandwiches, bit did make some last nigh on brown teacake with egg mayo.
Took another 2 brown teacakes out of the freezer,so will have those tonight with tuna mayo.

Sometimes I forget to like posts, but that doesn't mean I don't like them.

Sandwich and salad for me at lunch time, usually lots of veg and salmon, chicken or omelette for evening meal.

Stir fry is quick, so not a lot of time spent at the oven getting even hotter,

Yes you want something that doesn't require a long time standing in a hot kitchen! Things that cook in the oven quite quickly like fish, chops chicken portions of the good old ready meal!
Stir fry as Mimi says, minimal time over the stove
                  ,
During the current heatwave we are on holiday, where all our meals are cooked for us 😁😉

I love salad with lots of proper tasty tomatoes, red or yellow peppers and all sorts of green leaves. I could make a meal just out of those, but OH likes his piece of meat or fish - white fish, salmon, any fish really! If I'm really tired/lazy I do it in the microwave with a little splash of white wine, seasoning and parsley - under 2 1/2 mins.

I did chicken breasts in the oven tonight with a stir fry and rice noodles - carrots, green beans, cauliflower, broccoli, mushrooms, red onion and a dollop of sticky plum sauce.

If I'm doing new potatoes, rather than Jersey Royals I try and buy Anya. They've got a lovely nutty flavour and look different. Tesco sell a variety called Venezia - they're small, yellow flesh and incredibly tasty, but it seems to be a very short season and I think it's just about finished. They're delicious hot or cold.

Gem - that's such a lovely luxury, not having to cook!!!
