    What shall I cook?

    We often have friends round for meals. Couples, single friends or small groups.
    I usually cook on these occasions, although OH has a few nice meals in her small repertoire, and sometimes she cooks.
    It can be tricky to know what to cook for the two friends who are coming on Saturday.
    One is a vegetarian.
    This in itself is no problem. Her partner however doesn't eat any form of potato apart from chips, and has a few other things she doesn't like. This added to the no meat or fish makes the choice limited.
    I generally end up cooking something veggie with pasta, or rice.
    I probably will again, but just wondered if anyone had any good suggestions?

      I wouldn't have a clue what to make for a vegetarian.

      Meat-free recipes for entertaining and more. Vegetables are the centre of these flavour-packed dishes, from vegetarian chilli and pies to salads and stews
      Sometimes I forget to like posts,but that doesn't mean I don't like them.

        My DD has made a veg curry tonight with sweet potatoes , green beans, Cauli/Broccoli mix , peas , . she has made it before for us and its lovely , Her favourite is a veggie lasagne with sweet potato wedges , Another thing she likes is veggie burgers with salad and mixed pickles

            Don't over think it, they are going to be far more impressed with a tasty dish that you know everyone will like rather than go for the 'wow' factor by some new fan dangle trendy meal which could go horribly wrong.

              The lasagne is a good idea, except my friend makes the best lasagne I have had so I wont attempt to compete

              I think I made 'chicken' (Quorn ) curry the time before last that we had them round. Veggie sausages and mash, with chips for the potato hater, etc last time. It is while since I served them pasta, so I think I will end up with that, made with veggies and lots of cheese!

                  I know you will probably make your own chips Gems but can I just tell you we had the most delicious chips from M&S called triple cooked chips they are really fat and chunky nice and crispy on the outside, yummy.
                  My favourite when having people over (usually 2/4) I do a big lamb casserole with herbie dumplings followed by a light pudding always goes down well,for any veggies I have a recipe for portabellow mushrooms stuffed with cheeses of different kinds and served with mint jelly.

                        Lots of good suggestions!

                        Gem - have you tried roasting a whole cauliflower. I've done it once and it was very nice. I just hollowed out the stalk (that was the hardest part!) then drizzled it with olive oil and plenty of salt and roasted. It would be even nicer with garlic, but one of my guests that day is allergic to it. I keep promising I'll try it again. I know my DS2 has done it by breaking it into florets first then roasting with nice tasty seasoning etc. I must ask him for his recipe.

                          The friends are coming tonight.
                          I have decided to cook my own cheesy veggie past recipe (on the vegan and vegetarian section of Recipes on here) I see from my post there that I cooked it for them in November 2015, so I think it's safe to repeat it again now
                          Garlic bread and salad with it.
                          My vegetarian friend is diabetic but has done amazingly in bringing her levels right down by her diet and losing weight.
                          She will occasionally treat herself to dessert ,and sometimes I make a pud with sugar free sweetener for her.
                          Today I am buying a baked vanilla cheesecake, and putting mixed berries on top. There will also be a bowl of the berries if she decided to forgo the cheesecake.

                            Sounds very yummy Gemini, I am not a big meat eater, love vegetables so I would enjoy that even if I am not a veggie.
