    Sweet potato and red pepper soup

    Nana asked if I had a recipe for this. I don't really, but this is what I do. We had it once when out for lunch, and enjoyed it. I came home and made my own version. We like it

    I make this in the soup maker, so the recipe is aimed at that. I just chop up the ingredients, chuck them in, 21 minutes later there is lovely soup.
    To make without a soup maker, chop the ingredients, cook as usual, then blend or mash in whichever way you make your soup.
    This recipe serves 4

    1 red pepper
    2 or 3 sweet potatoes, depending on size
    I red onion
    I clove of garlic (or more if you prefer a more garlicky soup!)
    I Knorr vegetable stock pot
    Black pepper
    Thyme
    Water

    Thanks for the speedy reply. I have a soup maker too so will have a go when I'm next able to get the ingredients. Looks delish.

          Sounds yummy, I must try it. Nothing beats home made soup. I don't have a special machine - I just make mine in a normal pan and blend with a hand blender.

            Just bumping this up, as made it today for lunch and it was delicious

            I only had 1 largeish sweet potato, so added 2 large carrots, and it still tasted very yumy.

              I still haven't tried this, but it's getting to 'Soup Season' so good to have a reminder - and a variation with the carrots. thanks, Gem.
